I made a delicious dinner tonight (if I do say so myself). Despite the warm weather, I made soup (I finally used our new Le Creuset french oven). Here's the recipe that I used:
Hearty Cheddar Chowder
3 cups water, 3 chicken bouillon cubes
4 med. potatoes, diced
1 med. onion-sliced
1 cup sliced carrots
1/2 cup green pepper, diced (bell pepper)
1/3 cup margarine
1/3 cup plain flour
3 1/2 cups milk
4 cups shredded cheddar cheese
1(2 oz.) jar pimientos, drained
1/4 tsp. Tabasco
Combine water & bouillon cubes in Dutch oven and bring to boil. Add vegetables, cover and simmer until tender. Melt margarine in heavy saucepan; blend in flour and cook 1 min.; gradually add milk; cook over medium heat until thickened, stirring constantly. Add cheese stirring until melted. Stir cheese mixture, pimiento, and Tabasco into vegetable. mixture. Cook over low heat til thoroughly heated. DO NOT BOIL. 8-10 servings
This recipe made enough for lots of left overs!

Ooh, I love cheese! With all that flour, your hearty soup is probably off-limits for me right now. ;)
